The WILMA (Worms In Living Massive Aerobic)  COMPOSTER

 For your catering and home kitchen waste.
This can take all food waste except for fruit.
It uses a metal box  so is rat proof.
There are ample ventilation holes.
Housed inside wooden walls for insulation, with foam, this means it keeps going in the winter.
Watch out for over heating: so it must be in the shade.
It can have internal ramps which slow the descent of the material.
The finished worm casts are harvested from the bottom hatch.

This model has been found to become too hot, when in an exposed position, so it is very important that it is in the shade.
There is some rust appearing, so this galvanised metal may have a limited life. A more durable option is plastic wheelie bin, as long as rat proofing is added around the air holes and hatch way.

Note the cardboard store to the side. Cardboard and paper are shredded and added to the food waste


A hatch at the base allows the removal of finished compost, without disturbing the worms.

For catering and kitchen waste. But let's not call it waste, because it is not. It is a valuable resource not to chucked away. It contains nutrients we can return to the soil, for productive gardens.
Instead of 'food waste' I like to call it 'compost food', in the same way you might refer to chicken food or pig food. Compost is a type of living thing that we feed with certain things !
It can also be used to mature the compost that comes out of a hot composter.

This can take all food waste except for citrus fruit, as long as:
- the pieces of compost food are chopped  ( 1 inch max)  ; ie no whole vegetables,
- it is well mixed with plenty of 'browns' material: eg shredded paper, cardboard, leaves, 
- small amounts only of animal products are added and they are buried under other material so that flies cannot get to it, and air does not blow across it and spread germs.
- the food going into it is only from the premises where it is sited
- the compost from it is only used on the gardens in these premises, and not taken away
